This is a very refreshing sparkling with a nice acidity which is the result of an early harvest. There is a tiny amount of residual sugar, just enough to not dry the mouth. Flavors of anises, wild herbs and a touch of salt.

For their second vintage, Maxime and Angela chose to make a dedicated cuvee for the white Clairette, which is also blended their red cuvee.
The Clairette is mostly known in blends or sweet sparkling wine, so they choose to create this dry sparkling wine with this underestimated grape that they love.
