How was this cuvée born?
The most “traditional” wine among Philippe’s cuvées.
He made it almost academically, like he was teached to produce wine. Three weeks of maceration without the stems, then 9 months in barrels and 3 months in a stainless steel tank. Unfiltered, without added sulfites.
