Why this name?
During the fermentation process, it smelled like the Marrakech’s souks (the name of marketplaces in northern Africa), the spices, the Morocco’s heat ! That’s why she chose the name Couscous, a traditional Moroccan dish.
How was this cuvée born?
One of the easiest cuvée Lolita has been working on! She pressed the grapes after 7 days only and put the wines directly on the wooden barrels (just 2 for this cuvée). The fermentation process then happened inside the barrels. Then, only one soutirage (racking) in April before bottling.
