This cuvee was produced from Lolita’s grapes only.
The Syrah is unstemmed and pressed directly after harvesting.
The Grenache is also unstemmed and macerated for 6 days.
In the previous millesime, this cuvee was called “Demain je serai adorable” (tomorrow I’ll be nice), but it took 10 months for the sugar levels to settle. So this time she only called it “Adorable” (Nice). And the fermentation was over pretty quickly!
