Manual harvest with small crates.
Maceration without temperature control for 8 days. Pressing. Indigenous yeasts. Alcoholic and malolactic fermentations in stainless steel vats. Aging in ceramic jars for 6 months and 1 year bottled. Racking at the end of March. Natural vinification without oenological inputs. Without sticking and with a slight filtration. Very low dose of sulphites added after pressing and before bottling.
