1 day maceration, then pressed with grapes unstemmed.
Short maceration in amphore, and then in stainless steel tanks until bottling.
Oscillating between a red and a rosé, Sentinelle has a beautiful and deep ruby color. The nose is wild and peppery, with aromas of small red fruits, like a strawberry and cherry jam. A hearty roundness with a beautiful fruity balance, and a very nice freshness.

The Domain Les Salicaires is a family estate in Canet en Roussillon, that Vincent inherited in 2016. The whole domain is conducted in organic agriculture.
Being very close to the Mediterranean sea (1km), the vines take advantage of the sea spray which gives a minerality to both whites and reds.
