Terroir is sandstone, the vineyard is conducted in agriculture biologique. The harvest is strictly manual. Both cepages are vinified with the full grapes in concrete tanks.

This is a collaboration cuvee between Petit Oratoire and the winemaker Olivier Salon. They met with Lori in 2017, when Lori’s vineyard was badly hit by frost and he lost 70% of the grapes. This time, Olivier helped Lori and sold him grapes so that he could produce wines for the 2018 millesime.

This year they made their first collaboration cuvee, and called it “Saturday Night at Souvi” because they often worked together on saturdays, and Souvi is a shortcut for the village of “Souvignargues” which is where Olivier’s vineyard is located.
