The name comes from the capitelle which overlooks the vineyard.
A capitelle is a small, igloo-shaped hut, made out of dry stones without using mortar. Farmers and winemakers of Languedoc used them to seek shelter from the rain or sun or to store their tools.

A very easy going white, dry and fruity, perfect for the aperitif.

Both cepages come from a plot that Victor planted 4 years ago (we went to visit this new plot).
It’s a co-plantation of Roussanne and Vermentino, and for this millesime the grapes quantity was low so Victor decided to produce only magnums.
Grapes are hand-harvested and directly pressed, then undergo a low temperature maceration before being matured in stainless steel tanks for 6 months.
