It has a barnyard smell at first, with a little acidity which disappears after aeration.
The grapes are unstemmed, and are then directly pressed after harvest.
The wine then undergoes malolactic fermentation in a fiber tank. Only indigeneous yeasts.
No added chemicals or So2.
