This cepage is native of the Roussillon region, and is known more for its sweet wine versions.
However, Wilfried chooses to harvest very early to avoid having too much sweetness.
With only 10% degree, this is a very light white wine, with aromas of exotic fruits and white flowers.
But at the tasting those aromas are not so strong, and we feel more a citric taste.
With around 30 min of aerations, those aromas diminishes and a nice tension comes up.
