How was this cuvée born?
This millésime particularity is the time it took to be mature: 6 years. David kept tasting the wine every year until he was satisfied with it. Because there was 2 grams of residual sugar, and because it was fermented with natural yeasts and almost no sulfites, the wine continued to live and ferment into the bottle for all those years.

David wanted to produce a light wine, easy to drink, easily digestible, with freshness.
He considers this goal accomplished, with minerality as a plus which came while aging!
