Whole bunch maceration for 7 days. No reassemblies. Pressing. Indigenous yeasts. Alcoholic and malolactic fermentations in stainless steel vats. Aged in stainless steel vats. Racking at the beginning of March. Natural vinification without oenological inputs. Without fining or filtration. Very low dose of sulphites added after pressing and before bottling.

Easy to drink, dark fruit flavors like fresh plum and mild raisin flavors. Vibrant acidity, nice balance. A nice fizziness in the first sip.

They named the cuvee after the movie Porco Rosso by Hayao Miyazaki.
