The grapes of this cuvee were planted by Victor in co-plantation.
He harvested early to avoid having too much sugar, because he wanted more acidity than sweetness for this cuvee.
After harvest, he pressed both grapes directly together, and then the juice was clarified by hand, and put in the bottles.
Later. For the degorgement, it took 2 to 3 days (removal of the crown cap and evacuation of the freezed residuals).

The winemaker, Victor, was very satisfied with this petillant naturel, because it has beautiful bubbles which stays even a while after opening the bottle.
It has lots of tension and freshness.
