This is the first millesime that they work with unstemmed Carignan and Grenache (in 2018 they destemmed all the grapes). The Syrah was destemmed this year because it became mature very early and there were some losses.

This process allows them to get more buvability, less texture in the wine.

The Syrah underwent 3 days of maceration, harvest lasted 2 days.
Carignan and Grenache were macerated for 5 days.

The name of the cuvee is the age of the winemakers for the current millesime (so in 2021, Benoit was 38 years old and Erika 29).
At the start, they wanted to do a Grenache only cuvee, but were not so satisfied so since then they always blended the Grenache with the other grapes.
