Why this name?
Soi-disant means “supposedly”, “so-called”. She chose this name because Cinsault is supposedly not a noble cépage which can be kept. It’s a victim of the « soi-disant », the (wrong) biases that exist in the wine world.
How was this cuvée born?
It’s also one of the first cuvées that Elisabeth has ever made.
Cinsault aromas are beautifully highlighted by the carbonic maceration process that Elisabeth wanted to experiment with this grape.
